baked spaghettiIngredients

  • Spaghetti noodles (about half a pound)
  • 8 oz. cream cheese
  • 8 oz. sour cream (softened)
  • 1 jar Spaghetti Sauce
  • Optional: green pepper, onion, mushrooms
  • 1 pound ground beef or turkey (I use half sausage and half ground beef)
  • Shredded cheddar, mozzarella or Parmesan cheese

Instructions

  1. Cook noodles according to package. Brown meat and add onions, green peppers and desired seasoning (Italian seasonings, salt, pepper, etc).
  2. Mix everything in a big bowl. Pour into a 9×13 casserole dish, top with shredded cheese and bake at 350 for 20-25 minutes (until bubbly and just a little bit browned)

Lumpia

lumpia recipeIngredients

  • 1 lb. ground beef, cooked/drained
  • 4-6 green onions, chopped
  • 1/3 c. or 1 sm. can water chestnuts, chopped
  • 4 c. shredded cabbage (I buy the packaged cole slaw mix which includes the carrot)
  • 1 large carrot shredded
  • 1/8 c. ground pepper

Instructions

  1. Mix all of the above in large bowl. Wrap in lumpia/eggroll wrappers (seal with a little water at last fold) Fry in oil or oil/shortening mix till golden brown, drain on paper towels.

Sweet & Sour Sauce

Ingredients
Combine and set aside –

  • 1/2 c. vinegar
  • 1/2 c. sugar
  • 1/2 t. salt
  • 4 t. cornstarch
  • 2 T. water

Instructions

  1. Heat 2T. oil and pour in 1/4 c. ketchup, stirring lightly.
  2. Add ingredients which were set aside, stirring constantly until sauce thickens and boils.  Ready to serve!

Ingredients

  • Meat—chicken, pork, beef
  • Red pepper
  • Green pepper
  • Pineapple
  • Marinade—Italian dressing
  • Mushrooms
  • Cherry tomatoes
  • Onion
  • Zucchini
  • Bamboo skewers

Instructions

  1. Soak the bamboo skewers in water for 10-20 minutes. Cut vegetables and meat into 1 inch squares. Layer the vegetables and meat onto skewers. Place marinade on the kabobs. Refrigerate for a couple of hours or over night. Barbeque the skewers until meat is cooked. Serve with rice.

Ingredients

  • 1 pound ground beef chuck
  • 1 pound ground pork
  • 3 cups panko (Japanese breadcrumbs)
  • 1 1/2 cups whole milk
  • 2 large eggs, lightly beaten
  • 2 garlic cloves, minced
  • Coarse salt and ground pepper
  • 1/4 teaspoon ground allspice
  • 3 tablespoons butter
  • 1/3 cup all-purpose flour
  • 3 cups canned reduced-sodium beef broth
  • grape or current jelly, cooked egg noodles, chopped parsley, for serving (optional)

Instructions

  1. Preheat oven to 475 degrees. In a large bowl, combine beef, pork, panko, 1/2 cup milk, eggs, garlic, 1 tablespoon salt, 1/2 teaspoon pepper, and allspice. Mix just until combined.
  2. Using a rounded 1-tablespoon measure for each, form mixture into meatballs (you should have about 48). Place meatballs onto two rimmed baking sheets; bake until golden brown and cooked through, 10 to 12 minutes, rotating sheets halfway through.
  3. Meanwhile, make sauce: In a medium saucepan, melt butter over medium-high. Add flour; cook, whisking, 1 minute (do not let darken). Gradually whisk in remaining cup milk and broth; bring to a boil. Reduce heat, and simmer until sauce has slightly thickened, 2 to 3 minutes. Transfer to a large bowl.
  4. Using a slotted spoon, add meatballs to bowl with sauce; gently toss to combine. Serve as an appetizer, on toothpicks, with jelly on the side; or as a main, over noodles, garnished with parsley, with jelly on the side.

Quick Notes

Helpful Hint To Freeze: Divide meatballs and sauce among airtight containers; freeze up to 3 months. Thaw overnight in refrigerator (or place containers under cold running water to release frozen blocks). Reheat, thinning sauce with water if necessary.

  • 1 1/2 lb. ground beef
  • 1 lg. onion chopped
  • 1 1/2 pkg taco seasoning
  • 29 oz. tomato sauce
  • 15 oz. corn
  • 15 oz. black beans
  • 15 oz. kidney beans
  • 15 oz. pinto beans
  • 3 – 14 oz. cans diced tomatoes
  • 4 1/2 cups water

Instructions

Brown ground beef with onion. Put all ingredients in a large pot. Simmer 30 minutes. Garnish with crushed white corn chips, sour cream, chopped avocado, grated cheddar cheese, sliced green onions. Serves 10-12.

    Ingredients

    • 1 cup flour
    • 1/4 t. Salt
    • 1 1/2 t. Baking powder
    • 1/2 t. Poultry seasoning
    • 1/2 cup milk 1/8 cup oil
    • one round steak
    • large onion
    • 1 can of cream of chicken soup
    • 2 cup water

    Instructions

    1. Mix above ingredients together. Dip dumplings by teaspoons in melted butter and roll in bread crumbs.
    2. Take one round steak, pound it and cut it into 2-inch strips. Roll in flour seasoned with salt and pepper and paprika. Brown in oil.
    3. Cut large onion on meat. Pour in 1/2 cup water. Cover and sinner 30 minutes.
    4. Add 1 can of cream of chicken soup and 1 1/2 cups more water.
    5. Put in casserole dish. Add dumplings on top and bake at 425 degrees for at 25 minutes.

    Stuffed BreadsticksIngredients

    • Rhodes Texas Roll Dough, thawed until soft
    • Cream Cheese
    • Budding thin sliced lunch meat
    • Butter
    • Garlic Powder
    • Paprika

    Instructions

    1. Roll one piece of dough into a 3 ½” x 4” rectangle.
    2. Place cream cheese down the middle and 3 slices rolled meat overlapped.
    3. Roll, pinching sides together.
    4. Place on greased sheet and brush with melted butter and garlic powder. Sprinkle with paprika.
    5. Raise about 1 ½ hrs.
    6. Bake at 350 for 15- 20 min.

    Beef StewIngredients

    • 2 lbs stew meat
    • 1 seasoning packet “Beef Stew”
    • 1 cup water
    • 3 cups cubed, raw potatoes
    • 2 cups sliced, raw carrots
    • 1/2 cupt finely chopped onion
    • Salt
    • Pepper

    Instructions

    1. Cook and season to taste 2lbs of stew meat in pan. Don’t drain drippings. Add any “Beef Stew” seasoning packet to 1 cup water, whisk until smooth and pour over cooked meat. Simmer until seasoned broth starts to thicken. In separate soup stock pan, add 3 cups cubed potatoes, 2 cups carrots and ½ cup finely chopped onion. Cover veggies with water. Water level should be about 1/12 inches above the veggies (approx 7 cups). Bring to boil and cook until veggies are desired tenderness. When veggies are done dump the meat and broth mixture right into the soup stock pan with the veggies and water. Do Not Drain the veggies! Simmer on low heat for at least 30 minutes to allow flavors to blend. Salt/pepper to taste.

    PHILLY-CHEESE-STEAKIngredients

    • 3 lbs Steak cut in thin slices about 2 inches long
    • Montreal Steak Seasoning
    • 2 Bell Peppers thinly sliced
    • 1 med. Onion thinly sliced
    • 1 lg Zucchini thinly sliced
    • 2 Tomatoes chopped
    • Garlic Powder
    • Salt & Pepper
    • Mozzarella Cheese
    • Hogi Rolls

    Instructions

    1. Slice steak thin and sauté in a large pan until meat is slightly cooked, seasoning with Montreal Steak Seasoning.
    2. Add sliced vegetables to meat and sauté until they are tender (not too soft).
    3. Season everything with garlic powder, salt and pepper.
    4. When meat and veggies are cooked, add the chopped tomatoes and the shredded mozzarella cheese and let melt.
    5. Scoop onto a Hoagie Roll and enjoy.
