Instructions

Peel the cucumbers and cut them in half lengthwise. Using a small spoon or a melon baller, scoop out the seeds and watery center from each half, forming a shallow groove down the center. Using a mandolin, slice the cucumbers crosswise as thin as possible, ideally about 1/8 inch thick.

Place the cucumbers in a colander and sprinkle with the salt. Using clean hands, toss to combine the cucumbers with the salt. Set the colander over a bowl and refrigerate for at least 1 hour and up to 2 hours.

Using clean hands, squeeze handfuls of cucumber slices to release any excess liquid, and transfer the cucumbers to a medium nonreactive bowl. In another medium nonreactive bowl, combine the white vinegar, cider vinegar, and sugar. Stir until the sugar has completely dissolved. Pour the vinegar mixture over the cucumbers, add the chopped chives, and stir to thoroughly combine. Serve immediately, or refrigerate for up to 12 hours or overnight, and serve cold.

Ingredients

230 g cream cheese , at room temperature

55 g green onion , finely minced

salt

1 wonton wrappers , package

sweet & sour dipping sauce

Instructions

Prepare The Filling
Take 1/2 cup of cream cheese and let it sit out in room temperature for around thirty minutes to soften it a bit. Remove the end and top part off one green onion. If the green onion is a thick one, slice the thick stem in two. Now, finely mince the green onion and add 1/4 cup of the minced green onion to the cream cheese. Add a few grinds of black pepper and salt and mix together thoroughly.

Fill & Fold The Wontons
Take a wonton wrapper and lay it in front of you and spread thinly about 1/2 to 1 teaspoon of the cream cheese mixture in the middle of the wonton sheet. Take a little water and coat the edges of the sheet with your finger. Fold over into a triangle, sealing all the edges securely. Continue filling and folding until you finish your cream cheese mixture.

Fry The Wontons
Heat your frying oil in a wok or large skillet to 325° – 350° (163°- 177° C). You will know when the oil is hot enough when you start to see smoke or little squiggly lines in the oil. Drop your wontons slowly into the hot oil. Since you can eat the cream cheese filling uncooked, you only need to fry the wontons until they turn golden brown. This should take about thirty to fifty seconds, depending on your oil temperature.

Drain & Serve
Carefully remove the golden wontons and place on a paper towel to let the oil drain off. The wontons will still be cooking a few moments even after removing them from the oil. Once they dry off a bit, they are ready to eat and enjoy.

Here are some facts that may be of interest:

The average parent spends 38.5 minutes per week in meaningful conversation with their children. (A.C. Nielsen Co.)

Family dinners are more important than play, story time and other family events in the development of vocabulary of younger children. (Harvard Research, 1996)

Frequent family meals are associated with a lower risk of smoking, drinking and using drugs; with a lower incidence of depressive symptoms and suicidal thoughts; and with better grades in 11 to 18 year olds. (Archives of Pediatrics and Adolescent Medicine, 2004)

Adolescent girls who have frequent family meals, and a positive atmosphere during those meals, are less likely to have eating disorders. (University of Minnesota, 2004)

Kids who eat most often with their parents are 40% more likely to say they get mainly A’s and B’s in school than kids who have two or fewer family dinners a week. (National Center on Addiction and Substance Abuse at Columbia University)

Martha Farrell Erickson from the Children, Youth and Family Consortium at the University of Minnesota offers the following tips:

Make dinner a special family time. Turn off the TV, take the phone off the hook, dim the lights, light candles, and have a relaxing time together. Or, if you prefer, engage young children in a creative theme dinner like a picnic on the living room floor. Use your imagination and choose the approach that suits your family best.

Focus on positives. Don’t use mealtime as a time to criticize, complain, or argue. Treat each other with respect and affection. Let the little things ride; who cares if junior is wiggly at the table or little sis dribbles milk? Save the discussions of homework and messy bedrooms for another time.

Decide together how you can make high-quality family time a habit. Are there one or two days a week that you all can commit to for a fun family dinner? What do you need to clear from your schedule to make that happen? And when dinnertime doesn’t work, how about a snack and a family boardgame at bedtime?
